Protein Quality That Matters: DIAAS 100
38 g of protein is particularly valuable when the body can digest and utilize it effectively.
The Digestible Indispensable Amino Acid Score (DIAAS) is a method recommended by the Food and Agriculture Organization of the United Nations (FAO) for assessing protein quality.
It considers two important factors: whether a protein provides sufficient amounts of all essential amino acids and how well those amino acids are digested and absorbed.
A DIAAS score of 100 indicates that a protein meets the reference requirements for essential amino acids, taking their digestibility into account.
Our potato protein, the main ingredient in this baking mix, achieves a DIAAS score of 100, comparable to whole egg protein – an impressive result for a plant-based protein source.

Who Is This Baking Mix For?
For anyone who enjoys gluten-free baking and wants a mild, versatile bread.
For those looking to add more protein and dietary fiber to their everyday meals.
And for anyone baking bread for the first time: our mix already contains the carefully developed recipe. All you need to add is water and oil.
Preparation – Step by Step
1. Prepare the Dough
Add 260–270 ml of lukewarm water (maximum 38°C) and 2 tablespoons of olive oil to the baking mix.
Stir thoroughly with a spoon or spatula until a sticky dough forms. This is completely normal – the dough will remain softer than traditional bread dough.
Optionally, add 1 egg.
Let the dough rest for 5 minutes, then mix for approximately 1 minute on low speed using a dough hook.
2. Let the Dough Rise
Transfer the dough into a greased or parchment-lined loaf tin (approx. 20 cm).
Smooth the surface using damp fingers or a wet spatula.
Cover and let the dough rest at room temperature for 30–45 minutes.
3. Preheat the Oven
Preheat your oven to 180–200°C (conventional heat, top and bottom).
Place an ovenproof dish filled with water at the bottom of the oven to help create a lovely crust.
4. Bake, Cool & Enjoy
Bake the bread for approximately 30 minutes.
Allow it to cool completely before slicing. Enjoy!
Tip: Avoid using the fan-assisted setting if possible – conventional heat helps keep the bread moist.
