Sugar Beet Fiber Powder – Dietary Fiber from European Sugar Beets
Sugar beet fiber is extracted from the cell walls of sugar beets after the sugar has been removed. During processing, the sugar is separated, leaving behind valuable plant fibers.
That’s exactly what you’ll find in our Sugar Beet Fiber Powder: approximately 77 g of dietary fiber per 100 g, along with 7 g of naturally occurring protein. The sugar content is just 2 g per 100 g, and the powder does not taste sweet.
What makes this fiber special is its balanced composition: Around two-thirds of the dietary fiber is insoluble, providing structure and water-binding properties. Approximately 22 g consists of soluble fiber in the form of pectin, also naturally found in apples.
Pectin absorbs liquid and helps give yogurt, sauces, and drinks a creamier consistency.

What Sugar Beet Fiber Does in the Kitchen
- Absorbs and retains water: One gram of fiber can absorb approximately 7–8 g of water. Even under pressure, around 3.5–4 g remains bound. Its water-binding properties are also maintained during baking and cooking.
- Helps bread stay fresh for longer: Retained moisture keeps the crumb softer and slows down drying.
- Reduces moisture loss during cooking: Helps retain water in meatballs, veggie patties, and burgers.
- Supports gluten-free baking: Adds structure and helps retain moisture in recipes without gluten.
- Almost neutral in taste: Suitable for muesli, yogurt, smoothies, and sauces when used in small amounts.
A Natural Alternative to Common Binding Agents – Without E-Numbers
| Instead of… | Typical Usage | Suggested Sugar Beet Fiber Amount |
|---|---|---|
| Guar gum (E 412) | 0.1–0.5% | Approx. 1–3% of flour weight |
| Xanthan gum (E 415) | 0.1–0.5% | Approx. 1–3% |
| Locust bean gum (E 410) | 0.2–1% | Approx. 1–3% |
| Modified starch (E 14xx) | 1–3% | Approx. 1–5% |
Sugar beet fiber does not have the same thickening power as concentrated binding agents, but it provides a high dietary fiber content. When adjusting a recipe, start with the lowest suggested amount and experiment gradually.

How to Use Sugar Beet Fiber Powder
Fiber Drink: Stir one heaped teaspoon (approx. 5 g) into 200 ml of water or juice. Allow to stand briefly, then drink. Follow with another glass of water.
Muesli & Yogurt: Stir in 1–2 teaspoons and leave to stand briefly. The fiber absorbs liquid and creates a creamier consistency.
Smoothies: Blend in one teaspoon and enjoy immediately. The drink will thicken slightly after a few minutes.
Bread & Rolls: Add 2 tablespoons per 500 g of flour (approx. 15 g or 3%), along with around 50 ml of extra water. This helps keep the crumb moist for longer.
Gluten-Free Baking: Replace approximately 5% of the flour blend with sugar beet fiber to improve structure and moisture retention.
Meatballs & Veggie Patties: Mix 1–2 tablespoons into 500 g of mixture (2–4%), leave to swell for 5 minutes, then shape. This helps reduce moisture loss during cooking.
Sauces & Soups: Stir one teaspoon into two servings towards the end of cooking as an alternative to flour-based thickeners. The fiber retains its binding properties when heated.
Note: Start with the lower recommended amount and adjust gradually. Drink sufficient fluids with each serving, generally around 1.5–2 liters throughout the day.
